I normally save my enthusiasm for amazing chocolate desserts, but the Curried Couscous Salad with Dried Cranberries rates close to a 10 in my healthy-food book.

I made this dish with a few alterations.
1. I don't keep orange juice concentrate in the house, so I omitted it from the dressing. Instead, I replaced some of the water with the juice of one orange.
2. I did not have enough Craisins so I added some golden raisins as well.
3. I used a combination of basil and flat-leaf parsley.

YUM, is all I can say. My DH, a meat-lover at heart, loved this dish and even asked to have some leftovers in his lunch (the ultimate compliment around here). I will be making this one again and again. And only 257 calories in one cup.

We also tried the Pineapple-Coconut Gelato. It's not a sorbet, or an ice cream, or even a gelato, but it sure is tasty and it is a healthier alternative to richer ice creams. I would give it something around an 8.

Glad to see your positive review of the Pineapple-Coconut Gelato! I have been wanting to try it, and now we definately will. I agree with your assessment of the Curried Couscous Salad. It was wonderful!

One tip on the gelato--in our ice cream maker (a Krups), it took longer to freeze than most sorbets and ice creams. I think it was close to 35 minutes.
