From the German kirsch ("cherry") and wasser ("water"), this clear BRANDY is distilled from cherry juice and pits. In cookery, it's most prominently known as a flavorful addition to FONDUE and CHERRIES JUBILEE.

This is from Epicurious.

And from Cook's Thesaurus:

kirsch = kirschwasser = cherry brandy = Schwarzwalder Pronunciation: KEERSH Notes: This colorless cherry brandy is made primarily in Germany. French kirsch isn't quite as dry. Substitutes: cherry liqueur OR framboise OR plum brandy OR cherry syrup
