View Full Version : Need help with dessert for my menu

We're having our new neighbors over for dinner on Monday night and I don't know what to serve for dessert.

I'm making...

A salad with Spring mix and mandarin oranges
Roasted Red pepper, Portobello and Spinach Lasagna
Crusty whole wheat baquette

I'm looking for something quick and light that kids will like, too.
Any suggestions?

The Lemon Spongecake with Strawberry Filling (CL May 01) might be nice. It has been well reviewed here.

My vote would be for the "eclair cake". Some other suggestions would be "angel food cake w/berries", "mandarin orage delight" or maybe a "fruit pizza". Good Luck

I always vote for Key Lime Pie which is yummy and very refreshing, light and very summery!

ps..when should I be there for dinner????;)

The Blueberry Crisp a la Mode from the cover of July 2000 is really tasty and light. I also make it with 1/2 blueberries and 1/2 raspberries which is great too. Nice for summer.

Is the lasagna a CL recipe? It sounds great!

I wish I could take credit for this one, but it's a Pampered Chef recipe...and so delicious! It's not exactly light, but I lighten it with Light Butter.
Apple Crisp:
1 package of yellow cake mix
5 Granny Smith apples, peeled and sliced
2 T sugar
1/4 cup melted butter
1 T cinnamon
chopped walnuts, 1/4-1/2 cup
Place apples in baking dish coated with cooking spray. Mix the other ingredients to form a grainy-type consistency. Spread evenly over apples and bake 375 for 35-45 minutes.
This is so good served with fat-free vanilla ice cream!
And it makes the kitchen smell so inviting!

We LOVE the Polenta Pudding w/ Blueberry Sauce from a couple of issues ago. It is SOOO easy (it's one of those microwave recipes, remember?) and soooo good! Also, quite different. I always get such RAVE REVIEWS whenever I serve it!

What about the blackberry lemon pudding cake that everyone loves? I also would recommend the mandarin cream delight - my kids adore it, and it does make a lot of servings, and is quick and easy.

I'm looking at your menu and thinking that something lemony and summery would be a great complement. Anything chocolatey or too cakey might be a little too heavy after lasagna. Therefore, I'm going to adamantly agree with Avril H and recommend the blackberry lemon pudding cake. :) It's light, simple to prepare and delicious, and refreshing. I also have a recipe for a great low-fat lemon pudding cake from Moosewood if you'd rather not do the blackberries.

the Lemon-blackberry Pudding Cake (I use blueberries) is awesome! I agree that it would make a great summery finish to your meal.

If you're wanting something totally decadent, not the least bit light( I should be kicked off this board for even mentioning it), that kids as well as adults adore.....have I got the recipe for you!!!

PEANUT BUTTER ICE CREAM PIE WITH HOT FUDGE SAUCE!!!

It's one of those recipes that is great for a party because you can make it in advance and doesn't everyone love chocolate and peanut butter?!

Here you go, Lynn :)

Low-fat Lemon Pudding Cake

From Moosewood Low-Fat Favorites

l/2 c. unbleached white flour
l/2 tsp. baking powder
l l/4 c. sugar (divided)
l l/2 c. buttermilk
l/2 c. fresh lemon juice (about 3 lemons)
2 tsp. freshly grated lemon peel (optional)
2 egg yolks, lightly beaten
4 egg whites
pinch of salt

Preheat oven to 350. Lightly oil 8 8-oz. ramekins/ovenproof dessert cups, place in baking pan.
In lage bowl, combine flour, baking powder, and 3/4 c. sugar (add an additional l/4 c. sugar now if you want a very sweet confection). Stir in buttermilk, lemon juice, lemon peel if using and egg yolks--set aside.
With electric mixer, beat egg whites & salt until stiff. Beat in remaining l/2 c. sugar. Gently fold the egg whites into the batter. Spoon evenly into prepared cups. Pour boiling water into baking pan to reach halfway up the sides of cups.
Bake 35-45 min., until puffy and golden.

The strawberry gelato from July 2001 is great. I served it to a supper club. Also I substituted mango for strawberries and made mango gelato also. Served a scoop of each with a cookie and a few fresh blueberries . Pretty,light and tasty. Everyone loved it for a summertime dessert.
I made the two gelato a week ahead and froze. Took the containers out about 15-20 mins ahead of serving so they could become slightly soften as if it had just been made in ice cream maker.
