Help! Sun Dried Tomatoes!

Help! I have a rather large jar of sun dried tomatoes packed in oil that I bought about three weeks ago and have used about 1/2 of the jar. For awhile, the jar was on the top rack of the fridge, but I think DH moved it to the bottom shelf. When I pulled out the jar to see how much I have left - all the oil was solidified! I put it back on the top shelf, but do you think its bad now? Or was it just too cold on the bottom shelf- thanks!:(

This is quite common with sundried tomatoes that have been packed in oil. In the future, bring them to room temperature before using them and they will be fine.

Olive oil solidifies in the refridgerator, doesn't it?
