First, a caveat: due to high risk of fire the city is currently under a burn ban and charcoal grill restriction, so I had to broil the vegetables. I used spelt spaghetti instead of soba.
This was a pretty intense dish- or dense, rather. The combination of the nutty pasta and potatoes was heavy. I loved the dressing for the pasta (green onions, soy sauce, sherry, sesame oil, ginger) and the vegetables were great, but it was a bit much together. I think the pasta would have been best with just grilled peppers, perhaps grilled mushrooms (oh, if I'd thought of that before!)
I served this with wilted greens and carmelized sweet onions, mixed with Myzithra cheese. Wilted greens and carmelized onions is now my new favorite "side"dish!
Wine was a Wyndham Estate Bin 555 Shiraz Southeast Australia A hearty red that matched bite for bite the nutty pasta and rich veggies.
Now for a long walk to work off those carbos!
