View Full Version : what to do with southern greens

I made a half recipe of the chile greens recipe from 7/01 issue last week. (I am now a convert to "greens" ! Yea!)

But now I have a half bag of southern greens left. (Southern greens are mustard, turnip, and spinach greens. TJ's was out of the bags of just turnip greens.)

What else can I do with these? I'm having another fish dish this week (ranch oven-fried cod - my own creation :o ), as well as the blue cheese pepper steak wraps from 6/00, sesame pork fajitas from the Best of Cooking Light, and grilled Tandoori chicken from Bon Appetit's July issue.

I honestly dont know much about the taste of SOuthern greens, but I love spinach sauteed with a tough of olive oil and garlic....would these greens taste good that way?

Heidi, I made a recipe last night that I loved- posted in the thread below. Tonight I made a variation of the same, but used a sharp cheese (feta was the suggested, I used Myzithra) instead of cherries. I too have become a "greens" convert!

I agree with Kim, as well. Something simple really shows off the flavor of the greens.

Thank you both for your suggestions! Since I don't have any cheese on hand and I need to get these greens cooked pronto or they're gonna go by, I think I'll try the OO & garlic route this time. But, I'm definitely going to try your recipe, Julie, from Vegetable Heaven. I LOVE Myzithra! Yum! Yum! Yum!

I'll let you know how it goes.
