Have seen a few recipes pop up recently containing millet. Isn't that what is in bird seed? Can someone please describe what it tastes like as the recipes sound interesting.

I love millet as it adds a pleasing crunch. I think its somewhat reminiscent of cornmeal, but bigger grains, and not as corny, if that makes sense. Cornmeal is grainier, too, where millet is just crunchy. I like it thrown into my pancake batter. I believe you can also cook it up like a cereal, but I've never tried that. I've also added it to a few breads and liked that. Give it a try, even if it is birdseed (the bread I know has millet is called "birdseed bread"!)

I use millet all the time -- yes, it is commonly associated with birdseed these days, but it is one of the most ancient grains consumed by humans. Its texture is similar to quinoa and I find that it has a mealy, "golden" flavor. Hard to describe, but delicious. Try it! I find it in the bulk bins at my regular grocery store. :)
