review: Eggplant,Potato and Chickpea Casserole-July 00

As I was browsing through last July's issue i came across this gem. I don't know what I was up to last year to miss these recipes from July 2000. I have found so many winners from this issue. It calls for all types of items that are so fresh and in season like the eggplant, basil and cilantro, and the tomatoes and red pepper. . Basically it's a roasted veggie casserole. It smells wonderful while cooking. If you missed this and you love eggplant give this a try!

Thanks so much for the review...I quickly dug out the July 2000 CL and looked up the recipe...I also missed this one...I love the idea someone on the board gave to keep the mags sorted by months...i.e. all of July together, etc...I'll be trying this recipe, as I just purchased a nice shiny eggplant...as a side note...have you ever used a white eggplant? I was tempted to try one...

What a coincidence--I just tried this recipe this weekend also & thought it was quite good.
