ISO: Vegetarian Recipes

My best friend is coming to visit from South Africa next week and she will be here for 2 weeks. The problem is that she is a vegetarian and we are not so I am in search of lots of veg recipes. Can you help? She loves ethnic foods, especially mexican and anything really spicy. I would appreciate anything you can offer.

You're in luck -- I think we have a virtual vegetarian cookbook on this BB :)

Here's the list of posts I came up with when I searched for vegetarian in the title using the search function -- many of these are threads exactly like the one you started; others are simply for recipes, and some sound quite like what you're looking for. Hope this gets you started well enough!
