View Full Version : Recipe with veggie juice?
Hello everyone!
It's been awhile since I've posted, but I'm here now :) I wondering if anyone had any good recipes with V-8 in it? I bought some and now am finding I don't think I'm going to drink it much plain. Any thoughts? I would really like recipes beyond soup but whatever! Thanks everyone!

Here are a few we have tried. To be honest, I can't remember how we felt about the Savory Chicken over Couscous, but the V-8 bread was good. I have made it a couple of times. The SW Gazpacho, I haven't tried yet.

Savory Chicken over Couscous

Savory Chicken over Couscous
1 1/2 pounds boneless chicken breasts, cubed
1 tablespoon olive oil
3/4 cup chopped onion
2 cloves of garlic, minced
1 Jalapeno pepper, seeds removed, diced
1 tablespoon dried tarragon
1 1/2 cups tomato juice (I use V-8 Picante)
3/4 cup dried apricots, halved
salt & pepper to taste
1 cup cooked couscous
Fresh tarragon for garnish
In a large skillet, brown the chicken in the oil. Add onion, garlic, jalapeno pepper, tarragon, and cook until onions are tender. Stir in tomato juice and apricots--simmer for 15 minutes or until chicken is done. Add more V-8 juice if you want more liquid. Serve hot over prepared couscous, and garnish with fresh tarragon.

V-8 Bread

2 cups v-8® vegetable juice
2 tbl butter
3 tbl sugar
1 tsp salt
1 scant tsp basil and oregano
1/2 cup grated cheese (reduced fat cheddar)
1/4 cup ketchup
1/4 cup warm water
1 pkg yeast
7 cups flour (or more)
Heat v-8 and butter until butter melts. Add sugar, salt, herbs, ketchup, and cheese. Cool to luke warm. Add tomato mixture to 3 cups flour and yeast. Beat until smooth. Gradually add more flour until you have a soft workable dough. Knead 8-10 min. until smooth and elastic. Place in greased bowl, let rise until doubled (1 to 1-1/2 hrs). Punch down dough and divide in 1/2. Let rest 10 min., covered. Shape into loaves and place in well greased pans. Cover and let rise until doubled (1 hr). Bake at 350 for 25-35 min.

Southwest Gazpacho

Southwestern Gazpacho
from Target The Family Magazine
1 large clove garlic, peeled
1 slice day old firm white bread, torn into pieces
1/4 cup olive oil
1 pound fresh, ripe tomatoes, quartered and cored
1 large red bell pepper, cored, seeded and roughly chopped
4 scallions, trimmed and roughly chopped
1 medium cucumber, halved lengthwise, seeds discarded and coarsely
chopped
1/4 cup dry red wine
2 tablespoons freshly squeezed lime juice
1 tsp salt
1/4 tsp hot sauce ( such as tabasco)
1/4 tsp ground red pepper ( cayenne)
1 pickled jalapeno pepper, stems and seeds removed, very finely
minced, optional
2 cups vegetable juice ( such as V-8) or tomato juice
2 cups chicken broth
In a food processor or blender, add garlic and process until chopped.
Add bread and process until crumbly.
Add olive oil, tomatoes, pepper, scallions, cucumber, wine. lime
juice, salt, hot sauce, red pepper, wine and jalapeno pepper. Process
until smooth. Add vegetable juice and broth and process until smooth.
Tasteadding more lime juice, hot sauce, or salt as desired. Mixture
should be rather spicy. Chill. Before serving, taste again for
seasoning.
Ladle into mugs or bowls and garnish with any or all of the suggested
toppings. Serves 6.
Suggested toppings; tortilla chips, chopped tomatoes, bell peppers,
cucumbers, lime wedges and sour cream.

I don't know if this is the kind of thing you are looking for, but I have a vegetarian chili recipe that calls for tomato juice (I have used leftover V-8).

Not sure if drinks appeal to you, but the best Bloody Mary's I've ever made, I made with V8!! If you're not into mixes and don't mind making your own, V8, celery salt, Tobasco, worcestershire, lime juice, black pepper...YUM!!
If not, then I use up V8 in chili, soups, stews, any place that I would use tomato sauce. Just be careful of the sodium content! I've used it to accent pasta sauce, Swiss Steak, Chile Colorado, and even my Mexican Lasagna! I might as well add that we love V8 and keep it around constantly! ;)

Last year around July/August there was a Shrimp Gazpacho Salad, that called for tomato juice (you could use V-8) as part of the dressing. The salad was shrimp on mesclun green with steamed green beans, cucumbers, and a dressing. It was a really light summer dish.
