I dug this one out again for dinner last night. It was cool and chilly up here in New England and this just hit the spot. This time I used a boneless pork shoulder roast and it turned out well. The first time I used pork sirloin and it was also great. Just goes to show you that you don't need to purchase the spendy tenderloin to make a great crock pot meal.

I loved this one too - and I also used the "cheaper" cut of pork. Love it when recipes are flexible!!!!

I've made it with pork loin which around here goes on sale fairly often for $1.99 a pound.

Can someone let me know what issue this is in? I have a friend whose trying to find good, low-fat meat recipes and she doesn't have a lot of time to cook so I'm sure a crock pot recipe would be particularly helpful. Thanks!

I've recently tried this recipe, and love it too, altho. the last time I made it, my red peppers practically disintegrated due to so many hours in a slow cooker. I had also added onion and carrot, and the carrot was also unappetizingly mushy. Has anyone modified this recipe to accomodate vegetables that can't withstand hours in the slow cooker? I was going to try just adding them for the last hour, or maybe do half for the whole time, and half for the last hour...any ideas?
