I like to make muffins but I find that CL has pretty slim pickins' when it comes to muffin recipes. I would love feedback on everyone's favourite muffins (especially if they freeze well).

I made muffins with the Jamaican banana bread recipe -- and they turned out superbly. They would certainly freeze well (without the topping, however), and actually make very elegant looking muffins.
In fact, you can turn almost any quick bread recipe from CL into muffins -- although you will have to watch them, as they will bake in 1/2 the time as the loaves.

Did the Jamaican Banana Bread Muffins taste as good without the topping? I was already planning to make the bread without the coconut.

Try the blueberry yogurt muffins. I believe someone posted them a while back. If you cannot find them, let me know!

I thought the bread itself (and the muffins) were very good without the topping. I must admit I added a tablespoon or so more butter than the recipe called for (for moisture's sake) and didn't find a need for the topping at all.

There is an excellent muffin recipe from the May 1999 issue (page 170), Strawberry-Orange Muffins. A great summer time treat...place them in the refrigerator about 20 mins. to slightly chill them, cool and yummy.

Angela! I had completely forgotten about those Strawberry/Orange muffins. I made them last year and we all loved them. How come I didn'' remember this at the beginning of strawberry season?? http://www.cookinglight.com/bbs/eek.gif?? I will have to dig out my recipe...

I'll definately put in my vote for the Strawberry Orange muffins. I also liked the Blueberry muffins from Jan 00. They had cornmeal in them, which I thought added a great texture and taste.

Strawberry orange muffins
1 1/4 c halved strawberries
3 tab butter or stick margarine melted
2 tsp grated orange rind
2 large eggs
1 1/2 c flour
1 1/4 c sugar
1 tsp baking powder
1/2 tsp salt
cooking spray
2 tsp sugar
Oven 400 (preheat)
Combine first 4 ing in a blender and process until blended. Lightly spoon flour into measuring cup and level with knife. Combine flour, 1 1/4 c sugar, baking powder and salt. Add strawberry mix to flour mix, stirring until moist. Spoon batter into 12 muffin cups coated w/ cooking spray. Sprinkle with 2 tsp sugar. Bake 20 mins or until muffins spring back when touched lightly in center. Remove from pan inmediately.

I made the strawberry-orange muffins last night and they were great...except...I accidentally sprinkled SALT on them before baking instead of sugar! I couldn't believe I made that mistake.
Needless to say, I ended up tossing them and am going to make another batch tonight--with sugar this time!!

I had the urge to make muffins on Saturday morning and I tried the CL recipe search. No good. I needed something more simple that I could make with what I already had in my house. So I did a search on line and found the following recipe. I thought they came out quite well. My husband liked these muffins, too. Not too sweet, perfect for breakfast and very simple to make.
2 Cups Flour
3 1/2 tsp baking powder
1/2 cup sugar
1 tsp cinnamon ( I added more!)
1 tsp nutmeg
1 cup peeled, chopped apple
1 egg, lightly beaten
1 cup milk
1/3 cup melted butter
Topping:
2 Tbsp brown sugar
1/4 tsp cinnamon (I added more here, too!)
1/4 tsp nutmeg
Preheat oven to 400 degrees
In a large bowl combine flour, baking powder, salt, sugar and spices. Stir in the apple. Combine egg, milk and melted butter. Add to dry ingredients, stirring until just moistened. Spoon into muffin tins that have been greased or lined with paper muffin cups. Comgine topping ingredients and sprinkle over muffins. Bake for 15-20 minutes.
I got 10 muffins out of the mix. Could probably have gotten 12 if I made them a little smaller. This can probably also be lightened up with egg substitute and lower fat milk.
