I just made this a few weeks ago...Mmmmm!! They were good!

Pork-and-Pineapple Kebabs With Peanut Sauce

INGREDIENTS FOR 2 SERVINGS:
1 tablespoon thinly sliced green onions
2 tablespoons reduced-fat peanut butter
2 tablespoons lemon juice
1 tablespoon soy sauce
1 tablespoon water
1/4 teaspoon hot sauce
3/4 teaspoon curry powder
1/2 pound lean boned pork loin, cut into 1-inch pieces
1/2 cup fresh or canned 1-1/2-inch pineapple chunks
1 small red bell pepper, cut into 1-inch pieces
Cooking spray
1 cup basmati rice

INSTRUCTIONS:
1. Combine first 6 ingredients in a small bowl; stir well with a whisk.
Reserve 1/4 cup peanut butter mixture; cover and chill. Add curry powder and
pork to remaining mixture in bowl; stir well. Cover and marinate in
refrigerator 1 to 8 hours.

2. Let reserved 1/4 cup peanut butter mixture stand at room temperature 30
minutes. Thread pork, pineapple, and bell pepper alternately onto 4 (10-inch)
skewers. Prepare grill or broiler. Place kebabs on grill rack or broiler pan
coated with cooking spray; cook 4 minutes on each side or until done. Serve
with reserved sauce and rice. Yield: 2 servings (serving size: 2 kebabs, 2
tablespoons sauce, and 1/2 cup rice).
