DH is coupon obsessed. I wind up with stuff I wouldn't buy, but now it's here and I have to use it. Some might call it creative, some might call it obsessive, I call it a cross to bear.

The latest was a bag of Simply Potatoes Shredded Hash Browns. First: do not pay too much attention to the "use by" date. The one on this package was Nov. 16, 2007. I opened it and it looked and smelled fine. Proceed.
The recipe I found on the website for Simply Potatoes was:

Simply Au Gratin Shreds
A creamy, cheesy favorite the whole family will love!

Preparation Time Time: 10 minutes
Time-To-Table Time: 55 minutes
Serves: 6

Ingredients:
1 package Simply Potatoes® Shredded Hash Browns
1/2 teaspoon salt
1/4 teaspoon ground black pepper
1 1/2 cups (6 ounces) Crystal Farms® Shredded Sharp Cheddar Cheese
3/4 cup chicken broth
1/2 cup whipping cream
2 tablespoons butter, cut into small pieces

Instructions:
1. Heat oven to 375°F. Spray 11x7-inch (2 quart) baking dish with nonstick cooking spray. In medium bowl stir together Simply Potatoes®, salt and pepper. Spread half of Simply Potatoes® into bottom of prepared pan. Top with 1 cup cheese. Spread with remaining Simply Potatoes®. Sprinkle with remaining 1/2 cup cheese.

2. In small bowl stir together chicken broth and cream. Pour over Simply Potatoes®. Place butter pieces randomly over potatoes. Bake, uncovered, 40 to 45 minutes or until potatoes are golden brown and tender.

Tip: Need to serve a large crowd? You can easily double this recipe and bake in a 13x9-inch baking dish.

My changes/additions were:

Added Onion Powder and Penzey's Granulated Garlic, used Vermont White Cheddar Cheese, had some Pecorino Romano ,so added that to the top before baking.

This got raves! I served it with grilled pork tenderloin, chimichurri sauce (used half for marinade and half drizzled over the cooked pork) and a tossed green salad. This was so easy! I may not buy Simply Potatoes again...unless DH has another coupon...but I'd certainly grate Yukon Golds and go from there. So easy! So Good! I assembled it about an hour ahead except for the broth and cream. I think you could use half and half.

Looks good! I actually buy those hashbrowns all the time because my husband likes to cook a big breakfast for the kids on the weekends. I always sleep through it :o , but I make my own breakfast with the leftover hashbrowns that are in the pan...I warm up the pan and add an egg and scramble it all up and then top with a slice of American cheese. Yum! :)
