Made these last night. They were very flavorful and very tender. Here is the recipe (adapted slightly from CL Complete) and my personal notes.

Marinated Lamb Chops With Herbs

Amount Measure Ingredient -- Preparation Method
-------- ------------ --------------------------------
8 3-ounce lamb chops
1/2 cup dry red wine
1/4 cup low-sodium soy sauce
2 tablespoons chopped fresh mint
1 tablespoon chopped fresh rosemary
2 cloves garlic -- crushed
1 teaspoon coarsely ground black pepper

Trim fat from lamb. Combine remaining ingredients. Place all in ziplock bag. Marinate for 8 hours.

Grill to desired doneness.

Serving Ideas : Serve with sauteeed mushrooms (see note) and rice pilaf.

NOTES : I used much less mint and added a bunch of fresh oregano. Also added more garlic.

After marinating, I strained the marinade and added it to some sauteed mushrooms - very delicious.

Wow, another one to put on my "to try" list from CL Complete...
My DH will thank you he loves lamb alot, but we've been cutting way down on meat. I'll make it as a special treat for him.

How do you think that marinade would work with a leg of lamb?

I think that the marinade would work for any cut of lamb that will be roasted, grilled or broiled. It is a very "herby" and flavorful marinade that needs a strong meat - I would not use this marinade on pork or chicken. I would only use on beef if it were a steak that I was grilling.
