Help!! We have new neighbors next door and my oven is broken until GE can find the parts. Any ideas for a no-bake treat I can bring them? Thanks much.

Is just the oven part broken (can you use the stovetop) or is the whole oven out of commission? Could you make fudge or Rice Krispie treats; homemade pasta sauce, something you can make on top of the stove? With the goodies, you could include a list of local services (dry cleaners, supermarkets, pharmacies, any stores you particularly like, farmers markets) -- the "insider" knowledge that usually takes months to acquire. You sound like a great neighbor!

If it's just the oven and not the stovetop...A friend of mine gave me this recipe for No-Bake Peanut Butter Cookies. They're quite good--though I don't think they qualify as cooking light!

1 1/2 c. quick-cooking oatmeal, uncooked
1/2 c. flaked coconut
1/3 c. chopped peanuts
1/3 c. sugar
1/4 c. creamy peanut butter
1/4 c. vegetable oil
1 (10-oz) package peanut butter chips

1. Combine oats, coconut, peanuts in a large bowl and set aside.

2. Combine sugar, peanut butter, and oil in large saucepan. Bring to a boil, stirring constantly until sugar melts. Remove from heat. Add peanut butter chips to saucepan, stirring til melted.

3. Add peanut butter mixture to oat mixture, stirring until dry ingredients are moistened. Drop by rounded teaspoonfuls onto wax paper. Chill until set.

Yep, I can use the stove, just not the oven.

Don't know if you're looking for something sweet, but in your neighbor's shoes, I think I would love something cool and refreshing that I could immediately serve the family for dinner - such as a cold pasta salad, perhaps with chicken. CL has some great-looking recipes, too.

You sound like an awesome neighbor!
