i think veggie quesadillas are a great companion to refried beans. or a diced vegetable salad with Mexican spices and tortillas o n the side would work.

Quick Moussaka from local paper and salad and a Pane Rustico from Trader Joe's.
Monday: Pan-seared Tilapia with Citrus Vinagrette (CL 1/08) with Quinoa with Dried Cherries and Pecans and Asparagus
Tuesday: 5 hour Beef Stew
Wednesday: Shrimp (maybe Ellie Krieger's Jambalaya with Shrimp and Ham which is on the try list or a repeat of her Caesar Salad with Lemon Pepper Grilled Shrimp which was awesome).
Thursday: my DH 'cooks' (take out-maybe Chinese?)

When I made this recipe from CL it made my top 10 for the year. It currently is rated 5 stars.
Nasi Goreng (Fried Rice)
We recommend topping this fried rice with diced cucumbers and tomatoes, but for a more traditional Indonesian accompaniment, top it with a fried egg. Sambal oelek is a spicy table condiment from Southeast Asia; look for it in gourmet grocery stores and Asian markets. Total time: 35 minutes.
Ingredients
2 teaspoons canola oil
1/3 cup minced shallots (about 3)
1 to 2 tablespoons minced serrano chile
1 tablespoon sambal oelek (chile paste with garlic)
2 teaspoons fish sauce
2 teaspoons low-sodium soy sauce
1/4 teaspoon salt
4 garlic cloves, minced
2 cups diced cooked chicken breast
2 cups diced cooked shrimp (about 12 ounces)
3 cups cooked rice
1/2 cup diced cucumber
1/2 cup diced tomato
Preparation
Heat canola oil in a large nonstick skillet over medium-high heat. Add shallots and chile to pan; sauté 2 minutes or until the shallots are lightly browned. Add chile paste, fish sauce, soy sauce, salt, and garlic to the pan; cook for 1 minute or until the sauce becomes fragrant. Add diced chicken, shrimp, and rice to the pan, stirring to coat with sauce. Cook for 2 minutes or until thoroughly heated, stirring occasionally. Place about 1 1/2 cups rice on each of 4 plates, and sprinkle each serving with 2 tablespoons cucumber and 2 tablespoons tomato.

Sorry, just saw this!
Wow, your brother had sophisticated taste for a kid! Well, I grew up watching my mom make this and she is definitely an "eyeball" it type of cook...no recipes used. :) So, over the years, I've made hybrids of her recipe, but the key ingredient is kecap manis, a thick soy sauce which differentiates nasi goreng from other types of Asian fried rice. I posted a rough recipe here (http://newlywedcooking.blogspot.com/2008/02/choose-your-own-adventure-fried-rice.html) that you can use as a guide. I omit the usual teaspoon or so of sambal (chili paste) because I have no tolerance for spicy foods! The other key is to use cold rice so it doesn't get gummy.
