i'm planning on making the four cheese macaroni tonight. anyone made it? any suggestions for it? i'm already planning on substituting feta for gorganzola because i have feta on hand.

also, i bought some fresh black eyed peas from the farmer's market today and while i love blackeyed peas, i've never made them fresh. can i just cook them in some water? please help.

and i'm curious about what everyone else is making for dinner tonight?

Hi Emily,

If I had fresh black-eyed peas, I'd saute some shallot or green onion and garlic in a little olive oil, add the peas over medium heat and stir them up good, add a little water, chicken broth or vegetable stock and pepper, and cover and simmer until tender (not too long). I'm not a southern cook, I'm sure the pros have better suggestions.

For dinner tonight, we are having the Italian meatloaf with fresh Parmesan instead of Provolone and lots of garlic and basil from my garden, along with roasted rosemary potatoes and fresh corn from the farmer's market. Hope your peas turn out great! http://www.cookinglight.com/bbs/smile.gif

Dinner last night was a mystery to me. My husband and I were both out during the afternoon so we had no idea what to eat. Know what we had? English muffin pizzas! I always loved those when I was a kid, then when I bought my house and was living alone, I used to make them for myself. Tonight, though, I shall cook! We're having penne pasta with eggplant, sausage, and basil. It's a recipe I've been dying to try!
