View Full Version : Looking for a specific rice recipe....

Several years ago CL did a feature on Carribbean food and there was a tropical rice recipe. There was also a section on Key West a few years ago that may have had such a recipe. Basically, though, I am looking for a "tropical" rice side dish. With the recipe finder down, Im hoping someone will have some ideas for me:) If no one has one, I have some ideas to make up one, but would like to at least LOOK at a recipe....

Pineapple-Coconut Rice

2 teaspoons olive oil
1 cup diced onion
2 teaspoons minced fresh thyme
OR
1/2 teaspoon dried thyme
1/4 teaspoon pepper
3/4 cup uncooked basmati or long-grain rice
1 1/2 cups diced fresh pineapple
1 cup water
1/2 cup chopped green onions
1/2 cup pineapple juice
2 tablespoons flaked sweetened coconut
1/2 teaspoon salt

Heat olive oil in a large saucepan over medium heat. Add diced onion, minced thyme, and pepper, and sauté 2 minutes. Add rice, and cook 1 minute. Stir in the pineapple and remaining ingredients, and bring to a boil. Cover, reduce heat, and simmer 20 minutes or until rice is done and liquid is absorbed.

Serving Size: 1 cup

Caribbean Rice and Beans

Amount Measure Ingredient -- Preparation Method

2/3 cup water
2/3 cup uncooked instant rice
1 teaspoon vegetable oil
Cooking spray
1 cup chopped onion
1/2 cup chopped celery
1/2 cup diced green bell pepper
3 garlic cloves -- minced
1 cup coarsely chopped tomato
1/8 teaspoon salt
1/4 teaspoon crushed red pepper
1/4 teaspoon ground cumin
1/4 cup chopped fresh cilantro
1 (15-ounce) can black beans -- drained
1/2 cup (2 ounces) shredded part-skim Mozzarella
cheese

Bring water to a boil in a saucepan, and stir in rice. Cover, reduce heat, and simmer 5 minutes or until liquid is absorbed; set aside.

Heat oil in a large nonstick skillet coated with cooking spray over medium-high heat until hot. Add onion, celery, bell pepper, and garlic; sauté 5 minutes or until tender. Add chopped tomato, salt, crushed red pepper, and cumin, and sauté 2 minutes. Stir in cooked rice, cilantro, and black beans, and cook for 1 minute or until thoroughly heated. Divide the bean mixture evenly among 4 plates, and sprinkle with cheese.

Serving Size: 1 cup bean mixture and 2 tablespoons cheese

The pineapple coconut rice is exactally what I was looking for and was what I was going to "invent" if I had imagined it:)

Didn't get here in time- sorry Kim! Anyway, I still wanted to share this recipe for Caribbean Rice. Back in May, my class had a Latin America Fiesta and this was one of the dishes we had. Kids and parents alike loved it! It's delicious and very simple to make!

Caribbean Rice

2 cups hot cooked rice
11 oz can mandarin oranges- drained and chopped
8 oz can crushed pineapple- drained
1/2 cup chopped red pepper
1/2 cup slivered almonds- toasted
1/2 cup unsweetened grated coconut- toasted*
1/3 cup sliced green onions/scallions
2 tablespoons Mango chutney
1/4 teaspoon ground ginger

Combine rice, mandarin oranges, pineapple, red pepper, almonds, coconut, green onions, chutney and ginger in large skillet over medium-high heat. Stir and cook until ingredients are blended and thoroughly heated.

*To toast coconut, spread grated coconut on an ungreased baking sheet and toast at 300 degrees F. for 1 minute.
