I have made a couple more of the bar cookie recipes that were originally posted by Valchemist on another thread. The two new ones I just tried were the Date Pecan Bars and the Fig Bars . Both were very tasty. The date bars did have a slight "coffee" flavor to them so these were my least favorite, but they were still pretty tasty. The fig bars were really yummy(my new favorite)...like a homemade fig newton. Here is my personal ranking of the ones I have tried to date:
1. Fig Bars
2. Blueberry Bars
3. Cranberry Granola Bars I used dry cherries and Healthy Valley low fat granola with dates).
4. Chocolate Cherry Bars
5. Date Pecan Bars

The last two were a tough call. I think it was more like a tie!

Other recent things I've made for review:
Boka Dushi -The peanut sauce made the dish. What a yummy sauce. Otherwise the chicken skewers were nicely spiced, but would have been boring without the sauce.

Mediterranean Tuna Cakes with Citrus Mayo. -This is a summer favorite of mine. It was from about a year ago, and is a very tasty dish that is light, citrusy and does not use the oven!!! This would be good alone, but the mayo really makes it shine that much more!

Falafel with Tahini and Roasted Eggplant Salad -I made these for a lawn concert my DH and 3 kids went to a week or so ago.(Kids got PB&J's, however 2 out of 3 of them tried the falafel! My 2yr. old and my 4yr. old promptly spit them out. My 5 yr. old would not touch them! Oh well. They tried it, at least, and I'll keep offering new things in hopes that one day they say "Hey mom, this is not so bad!"). Anyway the falafel was from Cooking Light Complete and the eggplant salad was from the recipe finder. The falafel was not your typical fried little ball. After sauteeing you still had to handle very gently since they were soft, but they stayed together well and were quite tasty, and the salad was a hit as was the concert and the fireworks after the show!!!

Whew! That's enough!!

Could I cooerce you into posting the recipe for the Mediterranean Tuna Cakes with Citrus Mayo. It sounds wonderful!

Here you go:

2T. nonfat mayo(I use light)
1T. skim milk
1/2t. grated lime rind
1T. lime juice
1/8t. cumin
3/4# tuna steak, finely chopped
3/4c. red pepper, finely chopped
1t. mint
1T. chopped fresh cilantro
1T. dry breadcrumbs
1T. onion, finely chopped
1T. nonfat mayo(or light)
1t. lemon juice
1/8t. salt
2T. dry breadcrumbs
1t. olive oil
Combine first 5 ingredients in a small bowl. Cover and chill. Combine tuna and next 8 ingredients in a bowl. Stir until well blended. Divide into 4 portions(I usually get more than cakes than four): shape into 1/2" patties. Dredge into 2T. dry breadcrumbs. Heat oil in nonstick skillet coated with cooking spray. Cook patties 3 min. on each side or until lightly browned. Serve with mayo.
