I LOVE THESE!!! They werent hard to make at all, in fact, i kinda did the directions in my own way...OK, so i didnt read the whole thing BEFORE i started! lol, I baked my chicken breast (about 5-6 small size ones) witha little seasoning, then let them cool, and hand shredded them (against the grain).
When it came time to *soften* the tortillas, i made 2 of them soggy!:( So, i figure you only had to dunk it for about 3-4 seconds, just so its a little flexible! It worked out. Oh on the tomatillos....(i had NO idea what they were, never bought them before) i had to have the sales clerk show me what she used once, some salsa verde sauce, which had tomatillos, cilantro, onions...in it. That was fine. Oh, then i did see tomatillos IN the porduce, but i have NO idea how or what to do w/them! lol ANYWAYS.... they turned out GREAT!! I loved them! I made spanish rice and refried beans too. Theres tons of leftovers too! ~:0) My dh liked them too, but likes my other enchiladas better (some campbells soup recipe ones!) I prefer these ones.
I also bought 5 pds of peaches, some to slice and freeze for later uses....but Im going to make that peach upside down cake tomorrow! mmm! Well that is if the peaches ripen a little more....
