I have to say that the June issue of cooking light is one of my favorites and I've been subscribing for at least five years. Everything I made was excellent and I would recommend.
Pasta with Prosciutto and Peas - very easy and quick
Curry-and Ginger Rubbed Lam Chops with Apricot Lime Sauce - well worth the effort - awesome taste and great to get the husband involved with the grilling.
Flan de Limon - passed the test of several people who swore that they wouldn't like lightened Flan. Plus converted someone that felt mixes were just as good a homemade. Nomore.
Drunken Stir Fried Beef with Green Beans - very easy to make and tasted excellent - my first try at Thai food.
An there are at least 10 more I have selected to try next. I'll have to add the sandwich to my list based on others comments.

I have to agree with you on the June issue. I have already repeated a couple of recipes from June.
I made the Grilled Striped Sea Bass with Chunky Mango-Ginger Sauce twice now. (I used halibut rather than sea bass) I have also made the Grilled Pork Chops with Sweet Peach Sauce twice. The DB loves both of these, it was per his request that I repeated them.
The sauce recipes make quite a lot, especially when I only cook for two of us. I froze the leftover sauce and pulled it out for the "repeaters". I am happy to say that the sauces kept very well. The meals turned into pretty quick fixers when I only had to pull the sauce from the freezer.
The Spicy Cucumber Salad with Peanuts is great.
On my "To Try" list are:
Oven-Roasted Sea Bass with Couscous and Warm Tomato Vinaigrette (again, will use halibut rather than sea bass)
Grilled Stuffed Portabello Mushrooms
Tangy Pork with Tomatillos, Tomatoes, and Cilantro
Drunken Stir Fried Beef with Green Beans
That Chicken and Brie Sandwich (must remember the comments about it being messy)
Chicken with Two Olive Topping
I was disappointed with the July issue, but am thinking that it works out better that way because there are so many recipes I still want to try from June.

I have been wanting to try the sauces in the June issue. I was wondering, what would you recommend I can switch the lamb in the apricot sauce for? I was thinking of using it with chicken. Would that be weird?

I don't see why not. The spices that are used would seem to work well with chicken. Try it and let us know.
Based on a former recommendation I'm trying the peanut cucumbers tonight with the Thai grilled chicken.
I made the butter crust corn pie this weekend and the chocolate amaretto cheesecake (I ended up substituting creme de cacao and a little almond extract for the amaretto - since it was Sunday and the liquor stores were closed. Still very good.) The corn pie was good but the crust didn't stick together very well.
june 2001 was actually one of my least favorite issues... there were a few recipes we tried that were pretty delicious, though:
grilled shrimp & plum skewers w/ hoisin sauce
green & yellow bean salad w/ chunky tomato dressing & feta cheese
spicy cucumber salad w/ peanuts
we plan to have the buttercrust corn pie this week...hopefully it will also be tasty!

we made the buttercrust corn pie last night and thought it was just awful. :p we usually love all the CL recipes we try, but not this one. DH thought there was no flavor...i thought there was flavor, just not good flavor! the crust seemed promising, but the filling just overpowered any goodness in the crust. i had to throw the rest of it out because i couldn't even stand the smell of it! i feel so bad for wasting those delicious ears of corn!
i may try the roasted corn and tomato tart next week...

Glad to see someone else enjoyed the Drunken Stir-Fried Beef with Green Beans. There were a couple of unfavorable reviews here, but I've made it twice now and really liked it both times. It had very authentic Thai flavor, and was much better than other Thai dishes we've attempted. I did make some substitutions when I couldn't find the ingredients needed after visiting 3 asian markets - dried lemongrass (1/2 quantity) for fresh, regular basil instead of Thai basil, and ginger instead of galangal, and the dish still turned out well. Preparation was about 25 minutes, but the cooking was only about 5 minutes so it really was a quick meal.

You must try these. Easy to assemble and make and since it is tomatoe season is another reason to make these. I made these for my sister and family over the July 4th weekend and they were a big hit. and I have made them twice, since then. I am wondering if baby bella would work, why not.
