I'm making Martha Stewart's Monkey Cake. It calls for 3 cups cake flour, of which I have none.

What happens if you just use plain old all-purpose flour? Does the 1 cup flour minus 2 TBSP plus 2 TBSP cornstarch substitution really work?

Betty Crocker says No to the cornstarch, yes to 2 Tbsp less AP flour per C,
and importantly, sift the flour before measuring. this is the formula i always use, and it always works for me.

Okay, so sift the flour, then measure out 1 cup. From the cup of sifted flour, remove 2 TBSP? Did I get it right?!

Scroll down a little to the blue box, about substituting cake flour. Note, this site does mention the cornstarch, but says it does not always work. This linked page does give some more info on flours, so maybe you can tell what would work for your recipe after reading the background info.
