View Full Version : Help me with my Pasta Salad

Okay, everyone, here's what I've got so far:

Orzo pasta
roasted corn kernels
celery
peas
hot pepper flakes
black beans
salt and pepper
olive oil
cilantro

All mixed together, it's almost good, but it's lacking something and I don't know what. Any ideas? I don't have to serve it until Monday.

Any suggestions would be greatly appreciated! Help me keep up my reputation!

Lime juice. It sounds like it needs lime juice. That would make it similar to a lot of corn salad recipes I've made in the past.

I would say either Grace's suggestion of lime juice or perhaps vinegar (such as rice or white wine). Or both? Either one would probably give it the zing that you say it seems to be lacking.

Definitely something acidic, like vinegar or lime juice. Or how about pickled sweet peppers, either red or green (or both)?

How about finely diced red/purple sweet onion? I would agree with a splash of lime juice.

Ohmigosh, you all are great! I've added diced red and green pepper, a little fresh garlic and a generous splash of lime juice. That's that ticket - it really tastes great! I am going to my sister's house, and she's married to a guy that LOVES to cook and we have a friendly competition all the time and I wanted to take something that would impress him. This will do it. Now everyone copy down what I already wrote, add the peppers, garlic and lime juice and impress your friends - you made this a great recipe!!!

Oooppppps! My bad - I meant red onion that I added, along with a little green pepper. My typing skills are on vacation today.
