Review: Chicken Thighs with Marsala Mushroom Cream Sauce

From the May 00 issue - delicious! This was really good. I made the recipe as is. It was easy and pretty quick to make. I loved the sundried tomatoes in it, I think the sauce would have been bland without it. It added a bit of tanginess.

I did use regular pasta instead of egg noodles (what I had on hand).

I would give it an 8.

I made this last month and it was awesome. I also didn't have egg noodles and served it over traditional pasta. It is definitely on my repeater list. I did cut back a little on the marsala the second time I made it. It's a new flavor for us and it seemed to be a little strong for our palates.

I just found a bulk package of Boneless/Skinless Chicken Thighs at Costco yesterday for $1.99 per pound...and my package was 6 lbs! I've never cooked thighs before, but I took the plunge and bought them, the price was just too good!

I had planned on digging through that May/01 issue and checking off Thigh recipes to try, and this was one of the ones I remember getting a good review on the BB. Also seem to remember the Garlic Lime Chicken Thighs getting raves. Was there any others that I need to put on the list! I got a lot 'o thighs!!! Thanks! :D

I loved the Oven Fried Chicken Thighs with Buttermilk Mustard sauce - very good. I am also planning to try the Thighs with Tomatoes and Prosciutto over Polenta. Have fun!

We've tried the following:

Spicy Yogurt-Marinated Chicken w/Couscous - excellent
Stir-fried Chicken and Broccoli w/Black Bean Sauce - absolutely our favorite; I've made it about 5 times already
Chicken With Prosciutto and Tomatoes Over Polenta - very good, worth trying, good left overs
Chicken Thighs w/Garlic and Lime - very good, but it didn't wow us over
Chicken Thighs w/Marsala-Mushroom Cream Sauce over Noodles - very good, lots of mushrooms
Chicken Tighs w/Goat Cheese Sauce and Tarragon - our second favorite from the article, so rich and creamy, but you've got to love goat cheese and tarragon
Oven-fried Chicken Thighs w/Buttermilk Mustard Sauce - excellent
