I have seen three recipes recently that call for "instant polenta" or "one package of instant polenta". I have not been able to find this in any of the supermarkets in my area - am I looking in the wrong section or for the wrong item? I have looked with cornmeal, flour, etc. and with ethnic foods. I do have recipes to make polenta, but the recipes I am referring to are for entrees that call for the polenta as an ingredient. Any suggestion or explanations would be appreciated!

I usually find instant polenta in small boxes in the rice and beans section of the supermarket in my area. I can't remember the name of the brand I buy but I'll post it as soon as I remember.

I just saw these tubes of polenta at the health store. Try also in your supermarket near international things..

Shelly's post to me in another thread about finding ditali reminded me that you can get two different brands of instant polenta (Bellino and Ferrara) at www.3emarket.com (http://www.3emarket.com)
I've used the Ferrara polenta myself, and it really does cook up well in about three to five minutes, with a taste nearly as good as the long-cooking polenta. I've also used it as a thickener and flavor agent in chili.

You can find instant polenta in your supermarket typically where the dried pastas, parmesan cheese, and jarred sauces are located. Contadina and Buitoni are brands I have found.
