We've just finished this salad after 3 days, and it is a repeater for sure. Actually, I am thrilled that it is a repeater because I had no hope for it in this house.
DH is somewhat difficult when it comes to new and different (to him) things. In particular, he WILL NOT EAT bell peppers or cucumbers. Well, both of these are in this salad. I had some sweet onions (he loves these) that I was trying to find a recipe for and this recipe sounded good to me, so I decided I could eat it all if he didn't like it.
The first time I served it, I announced that I wasn't sure if he'd like it so I just gave him a little bit...quarter cup maybe...as a side dish with a half sandwich. He ate it all, and scraped the bits out of the bottom of the dish (a good sign), BUT he didn't want any more and made no comment about it. The second time I served it, I gave him a little more. He ate it all, and scraped the dish again...still no comment. Today, I gave him a full serving, and when he finished he actually said "I like this salad...can you believe it?" Well, I really couldn't believe it, but I was very happy cause there's NO WAY I can sneak these two items into anything without complaints.
The salad marinates in the dressing and the cucumbers and peppers take on the taste of the dressing, and he liked that.
Sorry for the dissertation. I thought maybe some of you might have a similar problem, and I'd share this event. :D
