OK, y'all
I mentioned on another thread that I am on my own this week so I had decided tonight to have salmon so went to the store (18 miles-one way) with the notion that there was a Pecan Crusted Salmon recipe lurking on the BB somewhere...can't seem to find it though. Is it my imagination, was it another nut used (on the salmon, not the inquirer)? I have done 3 searches, had to be very creative with the last two but to no avail. Any ideas? Maybe it was another type of fish? I just have pecans on the brain, maybe?
Any help is greatly appreciated!

I know of a recipe for Pecan Crusted Pork Tenderloin with Red Onion Marmalade - any chance that's what you were thinking of? Hopefully someone will pull through with the recipe for you.

I got the recipe below from the iVillage food site. It is wonderful, but not very light. I don't use nearly as much pecans as they call for, so I guess my version is somewhat better.
Baked Salmon with Roasted Pecan Crust
1/2 tsp vegetable oil
1 1/2 lb salmon fillet
salt and freshly ground pepper
1 1/2 cup chopped pecans
2 1/2 tbsps melted butter
1 tbsp fresh lemon juice
1tsp Worcestershire sauce
1. Preheat the oven to 350°F.
2. Grease a medium roasting pan or large oven-proof skillet with the oil. Place the salmon fillet in the pan, skin side down, and sprinkle with the salt and pepper.
3. In a small bowl mix the pecans, melted butter, lemon juice, and Worcestershire sauce. Spread the nut topping on the salmon.
4. Place on the middle shelf of the oven and bake for about 20 minutes, or until cooked through.
PREP/COOK INFORMATION:
Prep time: 30 minutes
Serves: 4

Calories: 554
Carbs: 7
Fat: 42 grams
Protein: 37 grams

Thanks for the thoughts...How did the closing go and when do you move in? Are you going to commute into Houston or did you transfer to a school in the Woodlands? I see many concerts in your future!!

We didnt end up moving to the Woodlands...Scott got a new job that made it easier for him to be centrally located, so we bought a condo in the Galleria area. We move in tomorrow:)

Well, congrats on the move and while it might not be concerts at Cynthia Woods, the culture inside the Loop is definitely worth being there. I never lived more than 1/2 block outside the Loop while we were in Houston...plenty to do there and never mind the Galleria area!

Oh, my my my my my my my! Thank you so very much for that recipe, it is outstanding ! The fillet was large enough to warrant 2 servings so I am looking forward to this again tomorrow!
One small note: the ingredients do not call for salt but the first step in the directions do---do not salt the salmon even though I did lightly and I used kosher salt, it was way too salty to eat as a solid piece, I had to "chop" and mix it with the coating. I will definitely make this again and again.
