View Full Version : ISO Summery Dessert Made with Pineapple

I'm having some guests over for dinner tommorrow and I'm looking for an easy summery dessert made with fresh pinapple other than pineapple upside down cake. Got any ideas? The main course is the Thai grilled chicken from June 2001.
While there are some ideas for pineapple puddings here http://www.cookinglight.com/vbb/showthread.php?threadid=5338&highlight=pineapple+pudding , I'm thinking I'd be much more inclined to serve fresh pineapple (assuming it's ripe) chopped up with chunks of a few of different melons and quartered strawberries. Make it the night before and let it sit in the bowl so the flavors and juices blend. Can't get more summery than that!

Grilled pineapple was the first thing that came to my mind. Although Gail's idea sounds great, too.
This looks interesting...
Grilled Pineapple Dessert
1 large pineapple, peeled, cored and cut into 1 inch thick slices
3/4 cup tequila
3/4 cup brown sugar
1 1/2 teaspoon vanilla extract
1/2 teaspoon ground cinnamon
Mix tequila, sugar, vanilla and cinnamon together until sugar is dissolved. Preheat Grill. Place pineapple on grill (You could put the pieces on skewers to make grilling easier). Baste with tequila mixture while grilling. Turn occasionally. Grill about 10 minutes. Serve hot.

Grilled Pineapple with Raspberry Puree
(makes 8 servings)
1 large fresh pineapple
1 cup (124 g) fresh raspberries
Light a grill or preheat broiler.
Cut pineapple lengthwise through the leaves into 8 wedges. Remove the tough core. Grill or broil the pineapple until just charred, 2 minutes on each side.
Puree the raspberries in a food processor or blender until smooth. Drizzle about 1 tablespoon (15 ml) of the puree into a decorative pattern on each of 8 large dessert plates. Top with pineapple wedge and serve at once.
Per serving: 51 calories (7% calories from fat), 1 g protein, 1 g total fat (0 saturated fat), 13 g carbohydrates, 2 g dietary fiber, 0 cholesterol, 1 mg sodium
Diabetic exchanges: 1 carbohydrate (fruit)
Grilled Pineapple
1 ripe pineapple
1/2 cup melted unsalted butter
3/4 cup granulated sugar
1 teaspoon grated lime zest
1 teaspoon cinnamon
1/8 teaspoon ground cloves
6 cups vanilla ice cream
1/2 cup dark rum or 151-proof rum for flambeing (optional)
Preheat the grill to high. Oil the grate.
Cut the rind off the pineapple, leaving the green leaves intact. Cut the pineapple in half lengthwise through the leaves as well as the fruit to obtain 8 slender wedges of pineapple with leaves intact. Trim the core off each pineapple wedge. Have the melted butter in one shallow bowl; mix the sugar, lime zest, cinnamon and cloves in another bowl.
Dip each wedge of pineapple first in melted butter, then in the sugar mixture, shaking off excess. Grill pineapple wedges until browned and sizzling, 5 to 8 minutes per side. Transfer to plates or a platter. Dish out the ice cream.
If using the rum, heat in a small saucepan until warm, almost hot, but do not let boil. Touch a match to the rum and pour over pineapple. Serve at once.
Serves 8.

I used to live in Hawaii. We would often go to the building in the middle of the Dole pineapple fields and buy spears of field-fresh pineapple. Nothing can beat that!
However:
If you're going to do a pineapple fruit salad, try tossing it with a very little brown sugar (like maybe 2 Tbs at most) and some dark rum and let it sit overnight. If you can get your hands on grated fresh coconut, toss that in, as well.
Pineapple mixes really well with coconut, strawberries and raspberries. Not so well with citrus, IMHO.

I was just thinking the same thing. Wonder if she's on track to try 100 recipes this year.

Thanks, everyone! These all look great! Since I'm such a huge fan of fresh pinapple, I intend to try every one of these. For tomorrow, though, I think I'm going to go with the pinapple fruit salad with brown sugar and rum. Yum!

I make a dessert that is adapted from Mollie Katzen's Vegetable Heaven. Just take fresh pineapple chunks and whir them in a blender, then freeze in a tupperware or pan and "poke aggressively with a fork" every 20 minutes or so until slushy. She recommends adding sugar, but I skip that and add a little lime juice, some coconut and rum.
