View Full Version : Help me salvage my muffins!

I just made these wonderful blueberry lemon muffins. Only one problem--They are burned on the bottom! I was planning to take them to work, but now that's out, at least in their current state. I was thinking, though, that maybe I might be able to cut the burned part off, crumble the top up and turn it into something else, maybe a trifle. No alcohol allowed for work food, of course, but I was thinking maybe some lemon pudding-like filling and fresh blueberries in layers with the muffin crumbles. Any ideas for me??

If they're OK otherwise, could you just cut the bottoms off and bring them in? If you want to hide the fact that the bottoms were cut off, you could heat up a griddle and set the muffins on it briefly - enough to just toast the bottoms slightly.

This is along the lines the Diana suggested, but depending on the size of the muffins, you could cut the burnt bottom off, and then slice the muffins like you would a loaf or tea cake and arrange them on a plate. Call it presentation :D
Or, I have once had frozen yogurt served with a toasted crumb topping. You'd have to toast the muffins and make crumbs from them (perhaps it would be easier to crumb then toast), otherwise I think moist muffins might turn soggy in a trifle or on ice cream, etc.

Just serve the tops of the muffins! ;)
