help! in search of this cooking light recipe.
we have found this before in the mag. and on
the site, but we are having lots of trouble
locating it today. this is a great alfredo
recipe made with cream cheese. help....we
are hungry!
Hi Daisy, there has been a recent post about this topic, but I don't know how to access the ones in the archives (can someone enlighten me??) but everyone raved about the Alfredo sauce in the 5 Star CL cookbook - I think that one is posted under that topic if you want to search.
Just found it under Alfredo Sauce 7-18-00 - look there for several recipes.

Fettuccini Alfredo
1 tab margarine
2 small cloves garlic minced
1 tab all purpose flour
1 1/3 c skim milk
2 tab light process cream cheese product
1 1/4 c grated fresh parmessan cheese divided
4 c hot cooked fettucini cooked without salt or fat
2 tsp chopped fresh parsley
Melt margarine in small saucepan over med heat.
Add garlic; saute 1 minute. Stir in flour. Gradually add milk, stirring with a wire whisk until blended. Cook 8 mins or until thick and bubbly stirring constantly. Stir in cream cheese, cook 2 minutes. Add 1 c Parmessan cheese, stirring constantly until it melts. Pour over hot cooked fettuccini, toss well to coat. Top with remaining 1/4 c Parmessan, fresh parsley and pepper.
