View Full Version : Triple-Layer Strawberry Cake (July)

Has anyone tried this? I need to make it in advance, and I'm wondering if the 2 hour freezing time is the maximum (or if I can leave it frozen overnight without making it hard as a rock!).

Or...does anyone have suggestions for other desserts I could try? We just started WW so I need something low points - less than 5, ideally. None of the cheesecakes or poundcakes fit into this category! http://www.cookinglight.com/bbs/frown.gif

Hi Jen!

I tried this a few weeks ago. It's pretty good. Just made it for DH and myself, so we ate some right after we froze it for 2 hours. It was pretty solidly frozen, so we let it sit for a bit before we sliced it. Did the same thing the following nights we had it.

Here's a tip for you, though. I was lazy & didn't wrap it well when we re-froze it. So when we took it out the next night, the angel food cake tasted like the green bell peppers from the next Ziploc over. Eewww. I couldn't stomach it after that, but DH didn't seem to mind! He polished it off that week.

I'm on WW too, since January. I've lost just over 50 pounds since then. It's so late at night that I'm having trouble recallng all my favorite CL low-point desserts. But if you're looking for a low-point chocolate fix, I can recommend No Pudge brownies. We've got a batch of them in the kitchen, as a matter of fact. They're a brownie mix that comes in 4 flavors. You mix it with yogurt, and...voila! 2 point brownie that you'd never know was zero fat.

Not bad for a mix! I found them at www.nopudge.com. (http://www.nopudge.com.)

If I think of any others, I'll stop back & post them!

I vouch for the Pudge brownies! They are awesome. http://www.cookinglight.com/bbs/biggrin.gif I like the original the best. Didn't care for the cappachino as much. When I bake these wonders I individually wrap them in saran and then store in ziplock bag. This way when I want something sweet I can reach into the freezer and grab one. The good thing about them is that they don't completely freeze "hard as a rock" so that you can eat right from the freezer.

I made the triple-layer strawberry cake for my birthday in July. Just ho-hum. You need to have the cake out for a while to defrost. I think the recipe would be improved if you had a layer of sauce on the first layer of cake, then put on the strawberries and then the yogurt,then the next cake layer. I would make more sauce to pour over each slice too.

Thanks to everyone for the info! I ended up just doing fresh fruit and light ice cream - by my calculations only about 4 pts. Yummy though!

CathieA, what is the Cream of the Crop? I tried creamofthecrop.com but it doesn't seem to be what you're talking about. I would love to see it!

Hey Jen,

I think Cream of the Crop is one of the WW cookbooks. They sell it at my location, but I bet Amazon.com might have it, though I haven't checked.

I did make the Peach Pie with Brown Sugar topping from a couple of issues back (it was the one with the cobbler on the cover) last night. Pretty fabulous, but not *that* low in points. I guess when it comes to desserts, I usually just end up planning ahead to allow for something.

Jen- Cream of the Crop is one of the WW cookbooks. They are all good. I led a group last night and I asked members for some low-point dessert ideas for you. I should have thought of the weekly recipe cards when I first posted for you! Look at these cards for desert ideas: Week 5 Blackberry Angelfood Trifle! (5 points). Week 3 has fruit kabobs and yogurt dip (2 points) and Week 8 has chocolate raspberry tarts (3 points).

In the States you get a getting started book the first week that has, among other things, some terrific recipes (try the veggie soup!). Then, for the next 12 weeks, you get a card with a recipe and/or program info/encouragement tips. DON"T MISS MEETINGS and "hope" for a better week. Weigh in and face the music. You would be surprised sometimes at how well you actually did and, if you didn't do well, you'll get some encouragement and feedback to improve your performance. Good luck.

Thanks for the advice CathieA! I'm not planning on skipping meetings, but since this one fell on a holiday anyway, and there isn't another one I can get to easily, I thought it wouldn't be too bad. I knew also that it might take a bit of time for me to get used to the plan at the beginning, and I think it would be depressing if after week 1 I had put on weight! I'm not paying for the meeting (since it's a holiday), and they'll give me the week 2 book next week. It seems like I didn't need to worry though, because it definitely seems to be working - as I told my husband this morning, my "smallest" jeans (which before I had to lie down on the bed to get zipped up) were "do-uppable" this morning straight out of the dryer...after only 7 days on WW! http://www.cookinglight.com/bbs/smile.gif I'm almost wishing Monday wasn't a holiday so I could have weighed in - I'm really excited about this!

It's so nice to hear from people who have been successful with this program. (PS I haven't tried the soup yet but have been meaning to! Maybe this week).

Thanks to all of you! I'll check out the cookbook at WW next week (although I'm in Canada, so they may not have it). I've only got the week 1 book so far - as I posted somewhere else, Monday (my WW day) was a holiday here so I missed week 2. I decided just to skip the week so I would (hopefully) have a really good result for my second weigh-in! Anyway, I'll keep an eye out for those desserts in the future weeks' books!
