I just made the two-cheese macaroni and cheese from the August 2001 issue. It was awesome!:) We all loved it! Even my children and husband loved it and they are all self-proclaimed Kraft macaroni and cheese lovers! Maybe I finally have some converts!!!!!!!!!!!!!
(I followed the recipe exactly except I left it in the oven until it was well browned on top!)

Hi! Would someone be willing to post this recipe? I haven't received my Aug issue yet, and I'm watching my 3 yr old granddaughter this weekend and mac and cheese is one of the few things she will eat (usually her diet consists of hot dogs, hot dogs and maybe a little bologna for variety!).

Creamy Two Cheese Macaroni
Recipe By : CL 8/01
Serving Size : 9 Preparation Time :0:00
Categories : Vegetables
Amount Measure Ingredient -- Preparation Method

1/4 cup all-purpose flour
2 1/2 cups 1% low-fat milk
1 cup (4oz.) shredded extra-sharp cheddar
cheese, -- divided
6 ounces Light Velveeta -- cubed
6 cups hot cooked elbow macaroni -- (about 3 c. uncooked)
1/4 teaspoon salt
Cooking spray
Preheat oven to 375 degrees. Lightly spoon flour into a dry measuring cup, and level with a knife. Heat a large saucepan over medium heat, add flour. Gradually add milk, stirring with a whisk until blended. Cook until thick (about 8 minutes), stirring frequently. Stir in 2/3 cup cheddar cheese and Velveeta; cook 3 minutes or until cheese melts, stirring frequently. Remove form heat; stir in macaroni and salt. Spoon the mixture into a 2-quart casserole dish coated with cooking spray. Sprinkle with 1/3 cup cheddar chees. Bake at 375 degrees for 25 minutes or until bubbly.

Thanks for the review. Maybe I'll actually get this one made. I've marked all of the other Mac and Cheese recipes that have been in CL and have yet to make any!

This is my homemade recipe, except I only use lgt. Velveeta and I add sauted broccoli, red peppers and onion. I also top with a mixture of seasoned breadcrumbs and skim milk (just add enough milk to make the mixture slightly wet).

What a timely recipe. My husband had a tooth pulled yesterday and I wanted to make him mac and cheese. I didn't relish buying 4 blocks of cheese to make the one that was in the best of the best a while back. I think I'll make this tonight but add a crumb topping like the 4 cheese one!

I made this last night for dinner and have to agree - its a winner! I've seen lots of mac-n-cheese recipes in CL before but they've always seemed kind of complicated and not very traditional. This one fit the bill!

I made it too and it was fab. Except I used skim deluxe milk instead of 1%, and I sprinkled some Parmesean on top. V good!

I made this recipe too and really thought it was good. We used really high quality Cheddar and the light Velveeta and I did use skim milk instead of the 1%.

Does anyone know how this Mac n Cheese compares to the Creamy 4 Cheese Mac N'Cheese from Oct. 2000? My family really enjoys that one and I'd like to and probably will try this one this week.

We had this tonight with the Crisp-Coated Catfish. I can't believe that the white sauce turned out without the butter. It was very good. :) The catfish....well I wasn't happy with it. This is the first time I have had catfish and I ate it but would not buy it again. The coating on the fish was missing something. I found it very bland even tough I added about a teaspoon of Garlic Chili Sauce to try to kick it up a bit.

The macaroni and cheese was very good but the catfish lacked seasoning and the breading seemed tough. I would repeat the macaroni but not the catfish.

Thanks for the review. I am going to make this for dinner tonight. I liked the 4 Cheese Macaroni but I did not like buying 4 different kinds of cheese for one dish. My husband is really looking forward to this.

My son - the one who would eat Kraft Mac and Cheese every meal - loved it. So did my dh and I. I was actually found hovering over the casserole dish before we started the dishes still picking at it. I used skim milk and put some parmesian cheese on top after amcleod suggestions! Thanks!

I made this for dinner last night and loved it. I thought I had sharp cheddar but was wrong so I substituted pepper jack. I was worried that it would not be good with this substitution but I was wrong. My husband thought that even my 3 year old nephew would like this.:D

I made this for dinner tonight with the catfish recipe (Mamasue - we must be on the same wave length!!:p ). Anyway - The Macaroni and Cheese was fabulous! I liked it better than the four cheese one from October. I also used the skim milk and it came out fine. I agree with Mamasue and ElinorC...the catfish was nothing special. I thought this recipe would be better than the one last month(?), but I found them both to be bland and unappetizing. These were my only attempts at catfish...may be my last for awhile!:(
But, a big thumbs up on the macaroni and cheese!!!

I also made this tonight with the catfish. My husband and I loved both - although, I admit - I cheated a little on the fish by first marinating it for a couple of hours in crushed garlic and lemon juice. Perhaps this prevented the fish from seeming so bland.
As for the mac-and-cheese, there is no doubt it will be a regular in this house!

I'm eager to make this now that I see everyone's comments. I've been looking for a good, easy mac&cheese recipe (have been hooked on Martha Stewart's "mac&cheese 101" recipe but it's VERY involved so I don't make it too often)
Loved this recipe!! I even made a batch that was 1 1/2 times the recipe (I wanted to use up the whole box of macaroni which is exactly 4.5 cups of dried macaroni)....plus, I love eating it leftover!! DH, who rarely enjoys any type of pasta, said "this is the best mac-n-cheese!!" Definately a keeper!!

Another "thumbs up" here. I made this yesterday (took all of 15 mins to prepare) and cooked it last night for dinner. Everybody thought it was really good! This will become a repeater in my household.

My DS actually thought it tasted to same as the "creamy four cheese mac n'cheese" sans the topping.
