I've been busy and it's been hot so I haven't really cooked lately. But today is sort of coolish and I have time so I'm looking for some inspiration from all you kind people. So, what's everyone having for dinner tonight?

I'm making the Polenta with Roasted Red Peppers and Fontina Cheese from Back to the Best in the August issue of CL. I'm going to serve a green salad with garlic vinaigrette (sp?) to go with it.

Its 60 degrees here today (big change from 95 yesterday!) - so I am going to make something I found on epicurious: Brie and Wild Mushroom Fondue. NOT low fat!! I have tons of porcini mushrooms and tons of brie thanks to my new shopping excursions at the local wholesale club.
I've been dying to try it....oh, well, once in awhile.....

I'm doing spicy pork dumpling soup. I made the dumplings with lean ground pork, hot peppers, lemongrass, and ginger and am serving them in homemade chicken broth. It's so nasty and rainy today-but still really muggy. I'm seriously PMSing so I really need some dessert. I'll probably make something chocolate.

We're trying the Chicken Enchiladas from the 8/2001 CL. The house smells yummy as I'm boiling the chicken right now... Hope they're good cause I'm REALLY in the mood to go out for Mexican right now. Fresh chips and salsa...... My expectations may be too high for this dish. :)

I went to In-n-out Burger for lunch with co-workers and had a double-double (naughty-naughty but yummy) burger for lunch. Because of this, I will be having the salad that I brought for lunch today for dinner;) .

I'm still wondering what to do with the two Double-D-cup naked chicken boobies I have defrosting at home. Jeepers, these things are huge!! :eek:

we're having bowtie pasta w/ a four cheese alfredo sauce i picked up at the store. i'll probably toss in some sundried tomatoes too. not at all low-fat, so i guess we should have some salad on the side... ;)

We're having the Asian burgers and Crunchy Bok Choy Salad (pg 182 fom Aug. 01). Sounds quick and easy!:D
Grilled pork loin with a Thai marinade (my cat seems to be going nuts over it), corn on the cob and a salad of mixed field greens and whatever I toss in.

I'm happy to say that tonight I'm not cooking dinner. Tonight is the Moms Night Out with my MOMS Club - yeah!
I'll be bringing Smoked Gouda and Caramelized Onion Quesadillas - a very yummy recipe that I got from Epicurious. So, I'm still cooking, just not for my family! They hate it when I do that.... ;) .
Jewel got me going on the Chipotle Chicken Enchiladas the other day so... that is on the menu tonight. I'm wondering what some suggestions for side dish to go with it...not beans or rice though.
Thoughts??? Comments???

Curried Kidney Beans (except I used canary beans tonight), with basmati rice, a big tossed salad with balsamic vinaigrette, roasted zucchini sticks, and sauteed little peppers that I just got from www.tienda.com .
BTW, I highly recommend Tienda for anyone who's interested in Spanish foods.

I just got done fixing the Spicy Cucumber Salad from the June '01 issue and with that we are having the grilled tomato, muenster and turkey sandwiches from the July '01 issue. I don't have any sourdough and don't want to hit the market so I'm taking some Rustic Rosemary Bread out of the freezer to use for the sandwiches instead.
Tomorrow night I'm going to try the pork loin with the cherry tomatoes and tomatillos (either June or July '01).

I am in a hotel this week (in Seattle, WA). I am thinking about going to the Cheesecake Factory for dinner, either that or continue my quest for the best crab cakes in downtown Seattle.
When I go home tomorrow night, I gotta cook something! Perhpas the pork tacos from July '01. I am tired of eating in restaurants and I am dangerously close to having to let the belt out a notch. :eek:
I am anxious to hear how the pork loin with cherry toms and tomatillos turns out. It may be on my menu for this weekend.

Cheesecake Factory is a restaurant. It has food that is WAY overrated and overpriced, HOWEVER, they have incredible cheesecake that is fairly reasonable in price and, did I mention, INCREDIBLE?
The last party I was at, someone brought 2 of their cheesecakes....one was a Tiramisu Cheesecake...can you IMAGINE? 2 of the best desserts in one?

Mmmm, I love the tiramisu cheesecake from the cheesecake factory!! I actually think the food is pretty good for chain, well, I 've enjoyed the ones I've gone to, anyway! :eek:
The Brie and Wild Mushroom Fondue that I made tonight was really simply fantastic. Not necessarily healthy, :eek: but so delicious and a nice treat! I really recommend it, it was an impressively delicious (and easy) recipe - from epicurious.com
Dh and I served chicken, broccoli, baked potatoes, mushrooms, and bread to dip in it. MMMMMMM :D

I ate out tonight at a small casual "beach-y" restaurant. But I still managed to get a healthy meal....a green salad and a bowl of tomato vegetable soup that was delicious! I might have to start eating at this restaurant every Thursday, just for the soup! :)

I'm one day late on this thread, but I made the Potato Gnocchi with Spinach and Yellow Squash (2000). It was quick, great and easy!
With the abundance of yellow squash around here right now and the fact that I had purchased a year's supply(!) of potato gnocchi from Sam's Club (volume retailer), and I had spinach just waiting for a cause, I thought it would be worth a try. I was impressed.

I'm a day late too.
What was planned for dinner last night: a mexican chopped salad with black beans, avocado, jicama, peppers, corn, etc.
What was eaten for dinner last night: a large veggie pizza from Dominos at 10 PM, eaten sitting on the floor amongst stacks of packing boxes. :)

Louise- How difficult is it to make Gnocchi? I'd love to try but I am a big chicken, boc boc.:p

Guess what, I've never made gnocchi:p ; but you can buy it (usually vacuum packed) in the fresh or dried pasta aisle of most grocery stores. Here is the recipe.
Potato Gnocchi with Spinach and Yellow Squash
Gnocchi are Italian potato dumplings; look for them wherever fresh pasta is sold.
1 (1-pound) package vacuum-packed potato gnocchi (such as Ferrara)
1 tablespoon olive oil
1 yellow squash, quartered lengthwise and thinly sliced
1-1/2 teaspoons bottled minced garlic
1 (10-ounce) package fresh spinach, torn
1/4 cup fat-free milk
1/4 teaspoon freshly ground black pepper
1/8 teaspoon salt
1/2 cup (2 ounces) shredded smoked Gouda cheese or grated sharp provolone cheese
Directions
Cook gnocchi in boiling water according to package directions.
While gnocchi cooks, heat oil in a large skillet over medium heat. Add squash; saute 4 minutes or until crisp-tender.
Add garlic; saute 1 minute. Add spinach; cover and cook 2 minutes or just until spinach wilts. Reduce heat to low; stir in milk, pepper, and salt. Add gnocchi and cheese; stir gently. Serve immediately.

Hi. Happy Friday everyone. WEll its 5pm so I considered I am making shrimp scampi with fettuccini tonight a salad and (ohno!) Dove bar for dessert. Well we had company for the past 9 days and being Friday and DH and friend playing in computer plus ran errands all day scampi sounds easy and fast

A big bowl of soup and a salad at one of our favorite restaurants. Oh, yes, and some white chocolate cheesecake for dessert. Don't know if this helps you decide, though, since I'm not cooking.

Thankyou for posting the Gnocchi recipe Luika! I made this for dinner tonight and we all enjoyed it. I think I added more garlic than the recipe called for- I never measure but other tan that made no changes. Fast and delicious!:)
