I am thinking about serving a breakfast entree or cassarole. Or even just making breakfast pockets or something. Anyone have some ideas or recipies they've tried and liked?:p

one of my favorite pockets to grab and eat while going to work is a whole wheat or soy pita pocket filled with smashed black beans flavored with a chipotle. I also include a scrambled egg white and a little cheese.

THe Salmon and Goat Cheese Frittata that you will find in the recipe search (goodness, it is working yet?) is so wonderful. I've made it for dinner and had the leftovers for a Sunday breakfast. I think it would be excellent for a brunch.

The French Toast Souffle is great. Also, a couple of months ago they did an article on breakfast and there was a casserole of black beans, corn tortillas, cheese, eggs, etc. that was great - I've made it several times now and makes for good leftovers.

French Toast Souffle, Broccoli Sausage Calzones and there is also a frittata made with leeks, carrots and ricotta cheese.

I've been on a pancake kick lately. Sometime in 2000 (in the 2001 Annual) CL had an article on pancake dinners with several recipes. So far I've tried the pear buttermilk pancakes and peanut butter pancakes. Both were very good. This weekend I plan to try the cheddar pancakes with sauteed apples and bacon.

veggie val A few of the breakfast entrees I've tried are the Southwestern Breakfast Cassserole in CL 12-00 and the Golden Onion Strata with Gruyere and Prosciutto from CL 5-00. The casserole was very good, if you want the typical egg/sausage/cheese dish. I thought the flavor of the strata was excellent, but it was more time-consuming. Don't know if this is something on your menu, but I remembered I made a breakfast roll that was very, very good, too, called Citrus-Cream Cheese Pull-Apart Rolls (from the cover of CL12-99.) :)

What about a breakfast pizza? It feeds a crowd & it is yummy. I use a whole wheat pizza crust (prebake) and top with scrambled eggs, bacon or sausage, and cheddar cheese. You could lighten it up by using poultry sausage and reduced fat cheese. I did this for a pre-parade get together on Memorial Day a few years back and it was so popular I did it again on Xmas morning in lieu of the egg strata.

I second the Southwestern Breakfast Casserole.
A while back, CL did a story on some make ahead breakfasts: Lemon-poppy seed muffins and broccoli-sausage calzones are the ones I can remember. They are both good (although we had the calzones for dinner, not breakfast!)

One thing I didn't mention, is that I would like to prepare this the night before. I do currently make and freeze/refridgerate pancakes and waffles for future breakfasts. Just looking for something with a little more stick (mainly for the husband). I like the ideas so far, thanks. Keep 'em coming!:D

veggie, the French Toast Souffle is a make ahead as is the Southwestern Casserole. You have to make the night before. Also, any strata recipes are make ahead too.
French toast souffle is my favorite and I made the Huckleberry coffee cake and froze it for my in laws this weekend. Also, I attended a brunch recently where the hostess had a tort pizza that was really yummy. Don't know exactly what was on it but it had a cream cheese type of filling with fruit like kiwi, berries and strawberry on top in a pretty design. The tort was store bought so it was super easy. Anybody have ideas on what the cream cheese mixture might have been?

Hey, PJB, you weren't at my brunch, were you?:D I made the Fresh Fruit Pizza with Lemon Curd (CL 5-00) for a brunch, and it was a big hit. The lemon curd is very smooth and very, very good ... no cream cheese in it, though. :)

CL has lots of stratas: ham & artichoke strata is great, onion, proscuitto, & gryuere strata is very good. cheddar, bacon, & tomato might be the next one i try. i was not in love with the SW breakfast casserole... too runny.
the BEST STRATA EVER is from Bon Appetit who knows when... sausage, feta, and sun-dried tomato strata... TO DIE FOR!
PS... I LOVE STRATAS!

For more info, you might want to try doing a search of previous threads. I know this subject has been brought up before with lots of great suggestions.
One of my favorites is Better Homes and Gardens' Farmer's Casserole which has been posted previously. This is a good one to prepare the day before and then bake in the morning.

The make ahead breakfast article was in March of this year, I am pretty sure.
