Made the mint cheesecaake but was disappointed by the consistency - was too watery (and I have made quite a few cheesecakes). Would suggest reducing the amount of nonfat cheesecake packages to two and adding either two 1/3 less fat pacakages or 1 regular and 1 1/3 less fat packages. (This will increase the fat content somewhat but the consistency comes out better.)
i made the banana split cheesecake. a bit too sweet for my tastes and i am also not that crazy about over-ripe bananas....but i actually made it for my niece and her family and i thought her kids would get a kick about making a sundae out of cheesecake (which they did)

Vanessa,
The nutty graham cake is on my list to make tomorrow night. I'll let you know how it is. I just have regular graham crackers, though. Do you think I could use those instead of the low-fat ones called for in the recipe?

Connie:
I think you can use regular Graham crackers. Many times I have used what I have at hand.
Good luck with the recipe http://www.cookinglight.com/bbs/smile.gif

Well, the cake is finally out of the oven and cooled. It's hard to finish baking early on a weeknight when butter has to come to room temp. Anyway, the nutty graham cake turned out good. I didn't thaw any cool whip for my single serving tonight, but probably will when I share with my husband. I used the regular graham crackers (about 7 big squares), a little more than 1/3 cup of mixture of pecans and walnuts, and baked it for about 5 minutes less than the recipe called for. It should freeze well, too, if it doesn't get eaten first! http://www.cookinglight.com/bbs/wink.gif
