This recipe is from Risotto Risotti, which is destined to become my new favorite cookbook. :) (Thanks, Val!)

I made this tonight and like Val, added white beans (not a whole can, more like half) for protein and to make it a meal in itself. I used veggie broth and I also subbed asiago for the parmesan, since I didn't have any. Oh, and I left out the white wine. I don't drink wine, and I didn't think DH would be too happy with me for opening a bottle of wine while he was out of town, just to use a half cup to cook my dinner when he wasn't around to finish off the rest!

Anyway, this was OUTSTANDING!!! So simple and easy, but yet very flavorful and filling. I was pleasantly surprised with the results! Really, I only made it to use up a bag of baby spinach that I had, plus the leftover can of beans. It turned out to be a great meal.
