This is definitely a salad to try this summer. We loved the simple combination of flavors, and it's a pretty one too. The recipe calls for watercress (which I love) but I used arugula in its place and it was great. I'm sure it would also be nice with a fun mix of local greens too.

Grilled Watermelon Salad

1 small seedless watermelon, cut into 8 slices (about 5 lbs.)
2 Tbs olive oil
salt and pepper
2 bunches watercress, trimmed
2 Tbs balsamic vinegar
1 cup crumbled goat cheese

1. Preheat grill.

2. Brush watermelon slices with oil. Season with salt and pepper. Grill watermelon 1-2 minutes on each side.

3. In a medium bowl, toss watercress with vinegar. Season with salt and pepper to taste. Set aside.

4. To assemble, sprinkle each grilled watermelon slice with goat cheese. Top with watercress mixture.

Servings: 8

I've grilled watermelon. Good stuff! I'll have to trry the salad.
