I have been looking for a really good chicken salad recipe and can't seem to find one I really like. At my previous job I used to eat chicken salad almost everyday from the cafeteria and it was AWESOME. It wasn't too moist and it had the best seasoning. I haven't had any as good since then! It seems it's always too chunky and just kind of blah!

Well, here's mine, I love it but everybody's taste is different - I like lots of crunchy stuff in mine.

Roasted/baked chicken breast, cubed
chopped celery, red onion
toasted almonds or pine nuts
red grapes, halved (sometimes)
fresh parsley

Mix all with light mayo, a little mustard, a little ranch dressing, salt and pepper.

Eat!

This is the chicken salad I've been making for years. I served it as an appetizer at my daughter's wedding scooped into baked wonton cups. I chop everything, including the chicken, fine in my food processor--almost, but not quite, to the point that it's ground up instead of chopped.

1 pound skinless boneless chicken breast, baked
1/2 each red and green bell peppers, diced
1/2 bunch green onion, minced
1 whole granny Smith apple, diced
1/4 cup finely chopped pecans, toasted
1/2 cup finely chopped celery
1/2 cup mayonnaise, or to taste
1/2 jar sweet pickles, finely chopped
Seasoned salt to taste
Black pepper to taste

Combine ingredients and chill.

I'm with Chefzhat...no mustard, though. Sometimes is use pecans or walnuts (toasted) and it's also REALLY good to add cilantro and red or orange bell pepper...oh, and onion salt.

For a twist, how about a curried chicken salad?

If possible, simmer the chicken in water that has curry powder in it.

Tear it into bite-sized pieces (you're allowed to cut it, if you prefer)
Toss with:

light mayo (as much as you like, though I tend to go light on it. For two chicken breasts, I'd use about 1/4 C mayo, max)
1 tsp - 1 Tbsp curry powder
1/4 tsp cayenne, or to taste
1 tbsp chutney (Major Grey type)
1/4 C raisins, light or dark
1 tbsp chopped peanuts]
1/2 C seedless red grapes, halved
