I forget about the archives, but after reading a post where they were mentioned, I read them for awhile. I saw a post about the spinach, rice and feta pie from Sept 96. If someone is still looking for the recipe, let me know. I've made it several times; we really like it!

Sis!!
Have you ever shared it with me? Seems like you would have - or maybe should have! http://www.cookinglight.com/bbs/smile.gif I would love the recipe. And maybe I could make it with my swiss chard! Sounds yummy. Thanks,
Your sis

Jeanne,
I'm sorry if I haven't shared this with you before. I thought we talked about ALL the recipes we make!

SPINCAH, RICE AND FETA PIE

2 tsp margarine
3/4 c chopped onion
2 tsp all-purpose flour
1/2 tsp salt
1/4 tsp pepper
1 1/2 c 1% low-fat milk (used skim)
2c COOKED long-grain rice
3/4 - 1 c crumbled feta cheese
1 large egg, lightly beaten
2 large egg whites
1 10 oz package frozed chopped spinach, thawed, drained and squeezed dry
2 T grated Parmesan cheese

Preheat oven to 400.
Melt margarine in a large saucepan over medium heat. Add chopped onion, and saute 3 minutes. Stir in flour, salt and pepper. Gradually add milk, stirring with a whisk until well-blended. Bring mixture to a simmer, and cook 1 minute or until slightly thick, stirring constantly. Remove saucepan from heat, and stir in the cooked rice, crumbled feta, egg, egg whites and spinach.
Pour mixture into a 9-inch pie plate coated with cooking spray. Sprinkle Parmesan cheese over pie. Bake pie at 400 degrees for 30-35 minutes or until set. Broil 2 minutes or until pie is golden brown.
