View Full Version : Blueberry pecan cake Pan ?
I am planning to make two of these today if i can. I was wondering do you guys think it would work in a nine inch square cake pan. I only have one nine inch springform. I have two of the nine inch square pans. thnks matt

I think I read a couple of posts where people who made it in regular pans rather than a springform pan had trouble getting it out of the pan without sticking and falling apart. In terms of the size, I think a 9 inch square pan is quite a bit larger that a 9 inch round. If you have an 8 inch square, I think it would be closer in size.

I think a 8 inche would work but I would cut a piece of partchment paper for the bottom. This cake is very moist. I made mine in the springform pan and didn't have any problems with it sticking to the sides but I did have to slide the knife around the bottom plate to release it. Also I didn't have buttermilk handy and used low fat vanilla yogurt which worked.

I just want to second Mamasue's good advice. I - DUH! - didn't read the directions carefully and made it in a regular cake pan. It was very difficult to get out. Using parchment paper would be a big help and would probably work.

I made this yesterday for breakfast and it was very good. I used frozen blueberries (unthawed) and it came out great. It was very moist - I had to bake it an extra 5 minutes. Very, very sweet. The orange zest was wonderful in this. However - I almost fell over when I saw how many calories and fat grams this cake had - especially for such a small serving size. I left out the nuts, so I saved a few calories there.
