View Full Version : Can I freeze prosciutto?

I have leftover prosciutto from making pasta with prosciutto and peas (June 01) and wanted to save it to try out the Empanada Gallega (Aug 01) when DH gets back from Guam. [Incidentally, I finally got my August issue, and I think it looks great!]

Has anyone had success freezing prosciutto? I'm not sure it'll keep in the fridge for two weeks.

Prosciutto freezes BEAUTIFULLY, and I would definitely choose that as an option over keeping it in the refrig. for a prolonged period of time! Since it is a very hard to find item in my neck of the woods, when I go out of town to purchase it, I do so in larger quantities than I will need for a single recipe, divide it accordingly, and freeze it. Just be sure, as with all meats, that you protect it from air and freezer burn by wrapping securely.

We are all thinking of you while DH is away and waiting PATIENTLY with you for his return!;)
