View Full Version : ISO munchies/appetizers for potluck BBQ

We're invited to a large picnic next weekend, and I've been asked to bring a munchie or appetizer. Both oven and fridge space are at a premium at this gathering, so it would be helpful to have something that could be served at room temperature or that only something small, like a bowl of dip, would need to be refrigerated. The good thing is that this crowd is pretty adventurous!! Any good suggestions??

I have a great appetizer that I take to most gatherings. It is definitely not healthy. I am not sure where I learned how to make it, but everyone loves it no matter what the occasion.

Sun-dried Tomato Pesto Torte

You will need a platter for this one. This is a 3 layer dip/spread. I usually serve it with lavosh crackers, but a bagette works just as well. I have made this with premade pestos as well as homemade. I will just give you the basic. If you need more information, just e-mail me.

The bottom layer that is to be spread directly onto the platter is garlic herb "rodelay" cheese.

The middle layer is sundried tomato pesto. Spread this over the cheese spread.

The top layer is basil pesto. Chill for a little while and serve. The amount of any of these items depends on the size platter that you decide to use.
