I made this to have with my lunch this week, and really like it. It tastes pretty much like you'd expect this combo of flavors to make, and was very easy. I didn't make any mods to the recipe, except that I may have used more chipotle than they said to, I used the whole pepper instead of measuring it. I would probably make this again as a salad to go with my lunch. However, I wouldn't eat very much of this salad at a time - the roasted pepper flavor would probably be too much after several bites. The salad would probably be good with cheese in a quesadilla.

I did think it was funny that in the list of ingredients they listed '1 can chipotle peppers' and then in the instructions it just tells you to remove 1 pepper and reserve the rest for another use!

I've noticed that CL has been changing how they list chipotle peppers as ingredients. Since I was vicitim to mis-reading the first recipe I made using chipotles I've been paying attention to how this ingredient is listed in recipes - I made the mistake of using the whole can when it read "1 canned chipotle pepper" and I think I wasn't the only one to do that. Wow was that zippy. They then went to something else that was more clear to me but I can't recall -- perhaps just removing the word canned or something. I guess that still wasn't clear enough since with this recipe they just say to buy a whole can and then in the instructions to use only 1. It is a very noticeable ingredient to mess up the quantity on!

LOL!!!:D I did the same thing as you about a year ago...used an entire can instead of one chili. After that I saw several Letters to the Editor about the same issue and now they have changed how they list it in their recipes. Live and learn...
