I made this last night for dinner. It was a huge hit! I did not add all the olive oil it called for infact just 1TBS and you could not tell. It had so much flavor and was easy to make. I also made the empanadas and they were not very good. I won't make them again.

I'm disappointed to hear that you didn't like the empanadas, because I was planning to make it for DH when he gets back from his trip. Can you go into a little more detail about what it was you didn't like?

Thanks for the review. Something I thought was ironic about receiving the CL issue and finding a paella recipe was that Martha Stewart had a paella recipe in her July issue. I thought that was pretty funny. Of course, hers had waaayy more fat in it!

Did you have a paella pan or did you jsut use a large skillet?

The paella also looked sort of time intensive. Would you agree? We're all anxious for more details!

Great to hear you like the paella recipe - I plan on making it this weekend. However, after a recent cooking disaster which included 'al-dente' rice, I'm wary of using the arborio rice and coating it with the oil in order to keep it 'tender'. I'd prefer to have my rice nice and soft. How did your rice turn out? And what kind specifically did you end up using?
