There has been a few threads talking about the Contessa that I dragged out my cookbook and decided to make the granola. She was on one of Martha Stewart's shows a few weeks ago and was making this. It was easy to put together and really good. Its not low in fat though. :D

Homemade Granola

Recipe By : The Barefoot Contessa Cookbook

Amount Measure Ingredient -- Preparation Method

4 cups old-fashioned rolled oats
2 cups sweetened, shredded coconut
2 cups sliced almonds
3/4 cup vegetable oil
1/2 cup honey
1 1/2 cups dried apricot -- diced
1 cup dried figs -- diced
1 cup dried cherries
1 Cup dried cranberries
1 cup cashews -- roasted and unsalted

Preheat the oven to 350º.

Toss the oats, coconut, and almonds together in a large bowl. Whisk together the oil and honey in a small bowl. Pour the liquids over the oat mixture and stir with a wooden spoon until all the oats and nuts are coated. Pour onto a 13 x 8-inch baking sheet. Bake, stirring occasionally with a spatula, until the mixture turns a nice, even golden brown, about 45 minutes.

Remove the granola from the oven and allow to cool, stirring occasionally. Add the apricots, figs, cherries, cranberries, and cashews. Store the cooled granola in an airtight container.

Yield:
"12 cups"

I made this last night - after watching her make it last Saturday on her show on Food TV. Is is so yummy. I have not even added any fruits at this point. VERY good and easy. Could I trouble someone with mastercook to provide nutrional info on this (assuming no added fruit)? I am sure I will not want to know - but probably should...

I have been making this for several months since I saw her make it on an earlier show. I love it - with the change that I only add 1/4 cup oil. I love this ( 2-3 T) on yogurt.

I assumed 24 half-cup servings. For the recipe including all the dried fruit, the nutrition info is:

Per Serving (excluding unknown items): 325 Calories; 19g Fat (49.3% calories from fat); 6g Protein; 37g Carbohydrate; 5g Dietary Fiber; 0mg Cholesterol; 21mg Sodium. Exchanges: 1 Grain(Starch); 1/2 Lean Meat; 1 Fruit; 3 1/2 Fat; 1/2 Other Carbohydrates.

Without any of the dried fruit, it is:

Per Serving (excluding unknown items): 265 Calories; 19g Fat (60.5% calories from fat); 6g Protein; 22g Carbohydrate; 3g Dietary Fiber; 0mg Cholesterol; 19mg Sodium. Exchanges: 1 Grain(Starch); 1/2 Lean Meat; 0 Fruit; 3 1/2 Fat; 1/2 Other Carbohydrates.

Made with only 1/4 cup oil, as Alice suggested (includes fruit):

Per Serving (excluding unknown items): 285 Calories; 14g Fat (42.5% calories from fat); 6g Protein; 37g Carbohydrate; 5g Dietary Fiber; 0mg Cholesterol; 21mg Sodium. Exchanges: 1 Grain(Starch); 1/2 Lean Meat; 1 Fruit; 2 1/2 Fat; 1/2 Other Carbohydrates.

YIKES!!! Thanks Gertdog - although I knew I would not want to know. 19grams of fat per 1/2 cup.... the pleasure of this just won't be the same...

In my experience,with most granola recipes you can add more oatmeal or other grains than called for, usually by 1-2 cups. By doing so, you can reduce the grams of fat per 1/2 c. (And get more granola per recipe!) Just make sure everything gets coated with the liquid.

One of my recipes calls for water as one of the liquids (along with oil and honey) and another one uses orange juice, so I'm sure you could cut the oil in the recipe by just substituting another liquid for part of it.

Also, remember that the nuts contribute a lot of the fat...but it's good fat ! You could, however, reduce the 3 c. of nuts if you want to reduce the fat content further. If you don't eliminate them (just reduce them) it won't change the overall taste that much, but you may feel less guilty about eating it! Hope that helps! :)
