Thought I'd share some of the CL things I've made over the past few days.
Raspberry-Balsamic Chicken from the CL Complete book, page 355. This received 4.5 stars out of 5--it was very tasty! It was sweet from the Raspberry preserve, but the Balsamic vinegar helped cut the sweetness. I served this with...
Fried Green Tomatoes from the Aug. issue. Wouldn't normally have served this combination, but we have tons of green tomatoes in the garden and were anxious to use some. The tomatoes were good--and I don't like tomatoes, red or green. My boyfriend thought they were similar to ones he's had down south, but being from Maryland he would add Old Bay to the coating. We did sprinkle some Old Bay on them and it kicked them up a bit. We gave them a 3.5 out of 5.
Also made a Pina Colada Cake from one of the summer of '00 issues (sorry, tore it out of the magazine and there is no date on the page--I'll post it later if anyone wants it). Very easy to make, nice light texture, a great summertime cake. There is no icing, but I thought next time I'd mix crushed drained pineapple with cool whip to use as an "icing". 4 stars out of 5.
