I am about to make a pumpkin walnut bread and I was wondering if I could freeze the leftover pumpkin?
Any thoughts?

You certainly can! I do that often... especially in the fall (I also freeze fresh pumpkin that I bake and then mash to use throughout the year).

One thing I do when freezing pumpkin or stews or such is to put a heavy layer of plastic wrap on top of it before sealing the lid. It might be a placebo, but I think it prevents ice crystals and funky odors from developing.
