Well, I am about to embark on my first clay pot cooking experience: roasted chicken. The particular challenge is this:

Most of these recipes instruct one to place all ingredients in a soaked pot, which one then places in a COLD oven. Then one sets the oven to some non-zero temp, say, 450 degrees. The cooking time begins at the switch of the dial, so to speak.

... but ...

Our oven is a little slow, poor thing. It takes a good 20-plus minutes for it to attain the desired temperature. Obviously, I would like to take this into account in cooking the bird, but I've lost track of how normal, vibrantly healthy ovens perform.

How long does it take your oven to heat to, say, 450 degrees?

I too am a Clay Pot cooker! I have a jennair ELECTRIC OVEN.
I think it heats up to 450° in about 5-7 minutes. I know your frustration, I had a gas oven before! I will NEVER have a gas oven again, only the gas top burners! Good luck with your chicken, which recipe are you using?

I have a gas range and it takes about 10 mins to get to 450 degrees.

I'm making Claypot Roasted Chicken from the Jacobi cookbook. It's the pot's (and mine) first recipe, which I chose not because I like chicken (I'm a veggie -- DH is not), but because it seems like a good, neutral recipe for breaking in the pot. Here it goes....!

The Claypot Chicken was a success! Woo hoo!!

DH claimed it was one of his top 20 dinners (with me or without me? not sure...). Many thanks for providing the perspective on healthy ovens' performance -- it definitely came in handy.
