View Full Version : Help! Too steamy to cook!

Today the heat index is supposed to be 110! I can't even think about turning on the stove much less the oven, and my usual no-cook meals just aren't exciting me today. So, I'm turning to all you wonderful cooks out there for help with tonight's dinner.

What is your favorite no-cook summer meal? I'd like something a little unusual. I would rather not grill--I don't even want to walk outside! I have to stop at the store on my way home, so I'm pretty open for anything as far as ingredients go. Anyone want to inspire me? Thanks!

I'd love to help, but the heat here in Indiana is smothering me too!

I'm breaking down and cooking tonight -- Jewel's Chicken Cordon Bleu sandwiches.

Last night we just had leftovers (grilled chicken with grilled vegetables and pasta -- something old from CL). That was nice since it was boiling here yesterday too.

What about a cold soup, like gazpacho? Maybe a loaf of crusty bread on the side, and a nice green salad? Just a thought...

Let's hope this heat moves out of the midwest soon....

I 'm really into tabouleh and giant salads currently. And when I say giant salad I mean mixed field greens, veggies, canned salmon, avocado slices, and a yummy vingarette. I just can't bare the thought of cooking when it's this hot.

It's past dinner, but for another scorcher, you might want to try the Cavatappi with Spinach Benas and Asiago Cheese (CL Complete). The only cooking is boiling water for the pasta, and that's pretty brief. We had that tonight with some focaccia I picked up at the store. It was good but mine looked like more spinach and less pasta than the picture.

m4star, I was inspired by your post, so I made a huge shrimp salad with artichoke hearts, tomatoes, orange peppers, broccoli, red lettuce, and feta with a garlic vinaigrette. I did break down and boil water for corn on the cob (it was only 16 cents an ear so how could I resist) and we had sourdough bread with it. It was a delicious dinner and definitely did not heat up my kitchen too much. I made enough for lunch today and I'm really looking forward to it.

Beth, thanks for the tip. I don't have the CL Complete but I do have a lot of back issues. I'm going to check the CL website to see what issue that recipe is from.
